We recently did a Gala for Stray Dog – a no kill shelter. Naturally, vegan food was in demand that evening! A guest liked one of our options and asked for the recipe. It’s simple and delicious.
Ingredients:
- 8 – bell peppers
- 1 tbs. – olive oil
- ½ cup – diced onion
- ½ cup – celery
- ½ cup – carrot
- ½ cup – acorn squash
- 3 clove – garlic
- 3 tbs. – fresh chopped basil
- 3 tbs. – fresh chopped parsley
- 3 tbs. – fresh chopped cilantro
- 2 cups – cooked quinoa
- 4 cups – cooked rice
- ½ cup nicoise or kalamata olives
- ½ cup – raisins
- ½ tsp. salt
- ¼ tsp. – white pepper
- 1/8 tsp. – cayenne
- 4 cups – chopped red, yellow and green peppers
- 2 cups – marinara
Directions:
Preheat oven to 375. Sauté vegetables, garlic and herbs in large skillet until soft (about 4 minutes). Stir often. Add rice, quinoa, raisins, salt and pepper; blend in a cup and add one cup of marinara to mixture. Fill whole peppers and place additional cup of marinara over the top.
